- 300-340 ,g Flour
- 200 g Sugar
- 4 Eggs (Room temperature)
- 200 g Butter (at room temperature)
- 1 Tsp vanilla
- 1 Tsp Baking soda
- I cup plain yogurt
- 1 Tsp Vinegar
- 1 Tsp Baking soda
- 1 Tsp salt
- 50 g Walnut,(crushed)
- 40 g Dried mixed Fruits
- 3 fresh Apples seeds removed and sliced thinly
Instructions to make to make Apple Fruit Cake
- Butter your pan and line with parchment paper, also heat up the oven.
Add the butter and into the mixer and cream till.the colour becomes lighter and the mixture looks lighter and very fluffy

- Add the eggs one after the other, always mixing well so each egg blends well into the mixture, add the vanilla essence, add keep mixing.

- Sieve flour, I did this 3 times, cos it allows air into the flour and makes the cake really light and extra fluffy. Add the baking powder and baking soda and salt into the flour..
Add in the yogurt and some part of flour and mix well...add more flour and mix well and lastly pour the vinegar and give it a good mix to ensure everything is fluffy and light.. - Using the fold in method, add the crushed walnut and mix fruits or raisins and fold it into the batter lightly


- Pour in the batter into the already prepared baking pan...
Line the sliced apple on the top to cover the top.
Once the top is fully cover, hit the pan on the ground to ensure it settles into every corner and naked evenly.

- Place cake into the already heated oven and bake for 40 -50 mins or till a tooth pick come out clean and you have a golden brown top.
Allow the cake to rest for 5 mins and remove from bake pan onto a rack to cool.
Slice it up, dust with some icing sugar and enjoy with your favourite beverage or a nice cocktail or milk shake.
The longer cake stays,the more delicious it taste. Trust me on this..
