- In a pan heat 1 Tbsp oil and add chopped garlic, stir for 1 min, add sliced mushrooms and on medium flame sauté, set aside
- Now add the sautéed mushrooms to the veggies and mix all well, set aside for 10 mins
- In a pan heat oil add the veggies and mushrooms and on low flame cook for 6-7 mins while continuously stirring making sure the yogurt doesn’t curdle. Set aside to cool
- Take 6 slices of bread and with a big cookie cutter cut out circles, set aside. Now take 3 bread disks and take a small cookie cutter and cut circles, apply mayonnaise on the bigger circular disk, place the smaller circular on it.
- Now add the veggies and mushrooms in the hole and grate mozzarella on it, do it generously, set aside
- Apply melted butter on sides of the top slice of disk
- In a pan heat butter and add the disks - depending on your pan you can add 2 or 3 disks, on low flame cover to toast for 2 mins, set aside
